Ragda Patties is a famous Mumbai street food. High on spices, this ‘Mumbai local’, is a wholesome appetizer.
Plus, by making this at home, you can be rest assured on the hygiene front too!
This dish goes by various other names too, such as Chana-Aloo-Tikki, or simply Chaat in the smaller towns of India. However, it is famously known as Ragda Patties in Mumbai. ‘Ragda’ refers to the Chickpea gravy and ‘Patties’ refers to the Potato grills.

Serves 4
2 cups boiled chickpeas
2 tbsp vegetable oil
2 tsp coriander powder
2 tsp roasted cumin powder
1 tsp turmeric powder
1 tsp red chilli powder
1 tsp salt
1/2 tsp sugar
2 tbsp gram flour mixed in a little water to form a paste
2 green chillies, chopped
1 tsp crushed ginger
2 tomatoes, chopped
Sweetened yogurt, tamarind chutney, chopped onions, green chillies and lemon wedges for garnishing
10 medium potatoes, boiled
4 green chillies, finely chopped
2 tsp roasted cumin powder
2 tsp dry mango powder
1 tsp salt
1 tbsp cornflour
1 tbsp semolina
Vegetable oil for frying

Step 1: To prepare the Ragda, heat oil in karahi/wok. Add the coriander powder, roasted cumin powder, turmeric powder, red chilli powder, salt sugar, gram flour paste and cook till the water has evaporated.
Step 2: Add the boiled chickpeas to the spices and stir in the chopped chillies, ginger and tomatoes. Mash some chickpeas for a the gravy to stick together. Add 1 cup water and simmer for 5 minutes. Check seasoning.
Step 3: To prepare the Patties, mash the boiled potatoes in a large bowl along with the chopped green chillies, roasted cumin powder, dry mango powder, and salt.
Step 4: Make flat cakes of the mixture and coat it with a layer of cornflour and semolina for firmness
Step 5: Heat oil in a flat pan for frying. Gently add the potato cakes and grill on both sides till they turn brown and crisp.
Step 6: Put the Patties in a plate and stir in the Ragda on top. Garnish with green chillies, chopped onions, sweetened yogurt, tamarind chutney and lemon wedges. Serve hot!
