Rogan Josh is the star of Kashmiri cuisine! ‘Rogan’ implies the fat of the mutton and ‘josh’ refers to the rich flavours and colour. This signature meat dish is popular among all restaurants and is full of aromatic spices. I would say that it is finger-licking good and an excellent choice for a non-vegetarian main course for a feast at home! Make and see for yourself!

Serves 4
3 tbsp lemon juice
1 cup yogurt
1 tsp salt
6 garlic cloves crushed
2 tsp grated ginger
500g mutton, washed
4 tbsp ghee
1 tsp cumin seeds
2 bay leaves
4 green cardamom pods
2 large onions, finely chopped
1 tsp coriander powder
1 tsp roasted cumin powder
1 tsp red chilli powder
2 tsp Kashmiri red chilli powder
250g chopped tomatoes
2 tbsp tomato paste
2/3 cup water
Plain/Jeera rice to serve with

Step 1: In a large bowl, whisk together the yogurt, lemon juice, salt and half of ginger and garlic. Add the mutton pieces and marinate for at least 4 hours. You may also marinate it overnight if possible.
Step 2: Heat the ghee in a large karahi, and fry the cumin seeds, bay leaves and cardamom pods for 2 minutes.
Step 3: Add the onions and remaining ginger and garlic and sauté till the onion turns soft and golden brown. Add coriander powder, roasted cumin powder, red chilli powder and Kashmiri red chilli powder and fry for 2 minutes.
Step 4: Add the marinated lamb to the wok and cook until the water is absorbed fully and the meat begins roasting up.
Step 5: Stir in the tomatoes, tomato paste and water. Cover and simmer for 1 hour, occasionally stirring in between. Check seasoning and serve hot with rice!
