Pasta Salad is literally my favourite recipe! I just love making this evergreen Italian appetizer, have improvised it along the way and created a unique secret recipe of my own; indeed, my go-to recipe in case of any dilemma! 😉
Pasta dishes are the staple food of Italy with its origins dating back to the 12th century! It comes in various shapes and sizes made of white flour or wheat flour, however for my recipe I am using the wheat flour Farfelle pasta (it is a bow-shaped pasta).
Here, in the Pasta Salad, I am also combining lots of veggies, upping its nutrition quotient to another level! So go on, don’t think twice, and make this delicious delight! Thank me later! 🙂
3 cups of Wheat flour Farfelle pasta
2 tsp salt
3 tbsp olive oil
5 garlic cloves, crushed
1 tsp dry red chillies
8 small tomatoes, pureed
1 green capsicum, diced
1 red capsicum, diced
7-8 broccoli florets
1 small cup sweetcorn
1 tsp black pepper powder
1/2 tsp red chilli powder
1/2 tsp sugar
1/4 tsp vinegar
2 tbsp tomato sauce
1 tbsp green chilli sauce
1/2 cup water
2 tbsp pasta mayonnaise or any mayonnaise
2 tbsp oregano flakes
1 tbsp grated cheese
Step 1: Boil half a pan of water with 1 tsp salt. Add the pasta to it. Let it boil till the pasta is well cooked. Check if the pasta is easy to chew. Drain the water and add 1 tbsp olive oil, set aside.
Step 2: Boil half a pan of water with a pinch of salt and add the sweet corn and broccoli florets to it. Boil for about 10 minutes and drain the excess water.
Step 3: Heat 2 tbsp olive oil in a wok. Add the dry red chillies, crushed garlic and sauté till golden brown. Add the pureed tomatoes. Stir and reduce the heat to medium.
Step 4: Add the green and red capsicum to the wok and stir. Add red chilli powder, black pepper powder, sugar, vinegar, tomato sauce and green chilli sauce (for that extra spice) and 1 tsp salt. Stir, cover and let it simmer for 5 minutes.
Step 5: On low flame only, add the boiled sweet-corn and broccoli florets to the above and stir once. Add water to get a final consistency. Check seasoning.
Step 6: Add the boiled pasta to the sauce above in the wok. Mix well. Add the pasta mayonnaise/mayonnaise. Give it one final mix.
Step 7: Serve hot garnished with grated cheese and oregano flakes!
