Panna Cotta is a classic Italian dessert and a real showstopper to your dinner evenings! It essentially means ‘cooked cream’, Panna means ‘cream’; Cotta means ‘cooked’ in Italian. Hence, Panna Cotta features cooked sweetened cream, infused with flavourings of your choice such as vanilla, chocolate, rum et al, moulded with gelatin. Here, I have used the original recipe ingredient- vanilla essence. Also, this dish is convenient while plating up, because it is made as an individual serving.
Panna Cotta is a beautiful dessert recipe that is super easy to make! It is mostly served with a berry coulis or caramel or chocolate sauce. Here, I am serving it with Strawberry Coulis.
Strawberry Coulis is a yummy strawberry sauce. Coulis (pronounced as Koolay) is a French terminology for ‘sauce’ and fruit coulis is generally used in desserts. So here, the Strawberry Coulis deliciously complements the Panna Cotta. It is both sweet and sharp and just goes twang on your palate! You may refrigerate the coulis and use it in various other desserts; it may very well be, aptly called the icing on the top’!

Panna Cotta
Serves 4
400ml full cream
100ml milk
1/4 cup powdered sugar
2 tsp vanilla essence
1/2 tbsp gelatin powder
2 tbsp water

Step 1: Mix the gelatin and water in a bowl and set aside.
Step 2: Mix the cream, milk and sugar in a pan. Put the pan on low flame. Give the ingredients a swirl till it starts to simmer at the edges. Switch off the gas and remove from fire. Do not boil.
Step 3: Let it cool for 5 minutes. Add the vanilla essence and the set gelatin from Step 1. Mix well.
Step 4: Pour the above mixture into bowls or cups, the size of which you’d want to serve in.
Step 5: Freeze for 3-4 hours.
Step 6: You may have it directly from the frozen moulds. To serve on a plate, put the sides of the bowl/cup in warm water for a minute, so that it demoulds easily. Next, place the serving plate upside down on the bowl/cup and invert it. Tap a little and demould; the Panna Cotta is ready to be served on a platter! Drizzle some coulis and dig in!

Strawberry Coulis
Makes 1 large bowl
4oog strawberries
1/3 cup powdered sugar
2 tbsp water
1 tbsp lemon juice

Step 1: Cut the fresh strawberries into quarters.
Step 2: Add them in a pan along with the sugar, lemon juice, and water.
Step 3: Put the pan on low flame and cook for 10 minutes. Mix well to get a slightly thick, sauce-like consistency.
Step 4: Remove from flame and let it cool for 15 minutes. Grind in a mixer to a puree.
Step 5: Strain it to remove the seeds and pith.
Step 6: Refrigerate and use as required!
