Shakshuka, a classic Tunisian recipe, is a popular breakfast dish in the middle-eastern nations. It is taken along with bread; this recipe essentially combines, poached eggs with tomatoes, bell peppers and lots of chillies!

Serves 4
4 eggs
1 tbsp olive oil
1 medium onion, finely chopped
2 cloves garlic, minced
1 medium red capsicum, chopped
6 tomatoes, finely chopped
2 tbsp tomato puree
2 tsp red chilli powder
1 tsp roasted cumin powder
Chilli flakes, to taste
1 tsp sugar
1/2 tsp salt
1 tsp black pepper powder
Mint leaves and green chillies for garnish

Step 1: Heat oil in a large pan. Add the garlic and onion and stir till they turn golden.
Step 2: Add the chopped tomatoes and red capsicum. Mix well. Cover and cook for 5 minutes.
Step 3: Add the tomato puree, red chilli powder, roasted cumin powder, chilli flakes for that extra punch. Mix well. Add sugar, salt and black pepper powder. Cook till the excess water has evaporated.
Step 4: Lower the heat. Make small gaps in the sauce. Gently crack the eggs and add them in those areas, one by one.
Step 5: Sprinkle salt and pepper over the eggs as per taste. Cook for 5 minutes.
Step 6: Garnish with fresh mint (or coriander) leaves and green chillies. Serve hot with bread of your choice!
