Sooji Halwa is the easiest Indian sweet dish! A halwa is a condensed form of confection served across Eurasia and Africa. It is like a porridge while being prepared but becomes dense after it is cooked and allowed to cool. It has different types and varies according to the main ingredient used.
Sooji Halwa is a famous form of halwa whose main ingredient is semolina (or ‘sooji’ in Hindi). Here, the key formula is to have the ingredients in the right proportions as detailed in the recipe below, to get the perfect Sooji Halwa!

1 cup semolina
1/2 cup ghee
1 cup sugar
4 cups water
15 cashew nuts
1 tsp green cardamom powder
1/2 cup warm milk
Few strands of saffron
Step 1: Soak the saffron strands in the milk for 20 minutes and set aside.
Step 2: Dry roast the almonds and cashew nuts and slice them in fine pieces. Set aside.
Step 3: Heat the water in a pan and add the sugar in it. Stir on low flame till the sugar is completely dissolved. Set aside.
Step 4: Now heat ghee in a karahi. Lower the flame and add the semolina. Keep stirring till the semolina doesn’t stick to the pan and changes colour to light brown.
Step 5: Add the sugar-water of Step 3. Keep stirring till it is completely dissolved and becomes a thick slurry.
Step 6: Now add the raisins and roasted almonds and cashew nuts of Step 2. Mix well.
Step 7: Add the saffron-milk of Step 1. Stir. Cook on low flame for 5-7 minutes.
Step 8: Sprinkle the green cardamom powder. Mix well. Turn off the flame as it starts to get dense. Serve hot!
