Guacamole is a quintessential Mexican recipe. Its star ingredient is the versatile fruit- avocado. Recently, I came across fresh, green avocados in my local grocery store and upon much research, I decided to make this delicious and healthy recipe. Since this dish requires ripe avocados, I kept the fresh ones in the sunlight for about two days and monitored the change in colour. As soon as they turned a shade darker to brown/red, I brought it to the kitchen to make my version of this classic recipe.
Guacamole is the quickest and easiest dish that I have made thus far. Also, it extremely high on nutrients and delicious on the palate. Guacamole can easily be used in salads, dips or condiments. So do try this dish and for a healthy evening binge!

Serves 2
3 medium avocados, ripened
5 cloves garlic, finely chopped
1/2 tomato, finely chopped
1/2 onion, finely chopped
1 jalapeno, finely chopped
1/4 tsp black pepper powder
1/4 tsp red chilli powder
1/2 tsp sea salt or rock salt
Juice of 1 lemon
1/2 tsp olive oil
1 tbsp chopped coriander leaves

Step 1: Cut the ripened avocados lengthwise, twist and break into two halves. Remove the seed and scoop out the pulp into a bowl. Add the lemon juice and mash using a fork or masher.
Step 2: Add the chopped garlic, tomato, onion, jalapeno, black pepper powder, red chilli powder, and sea/rock salt. Mix well.
Step 3: Drizzle olive oil. Add the chopped coriander leaves and mix. Check and adjust the seasoning. Serve cold as a dip with your favourite snack!
