Machher Dimer Bora

Machher Dimer Bora is a Bengali cuisine recipe of fish roe fritters; machher is fish and dimer is roe/eggs in Bengali. A bora or pakora is a form of savoury fritter in India, traditionally made with gram flour.
Machher Dimer Bora makes use of fish eggs to make savoury fritters. Here, I am using the eggs of the Rohu fish found in rivers of South Asia. You may use any other fish eggs, just the other ingredients should be constant. Try this indigenous recipe for yourself!

Serves 4
250g fish eggs, washed gently
1 cup gram flour
1/4 cup rice flour
1 onion, finely chopped
2-3 green chillies, finely chopped
1 tbsp ginger paste
1 tbsp garlic paste
1/2 tsp turmeric powder
1/2 tsp red chilli powder
1/2 tsp coriander powder
1/2 tsp salt
Mustard oil for frying

Step 1: In a large bowl, mix together all the ingredients except oil. Do not add water.
Step 2: Heat oil in a karahi. Turn the flame to medium. Using a large spoon, gently add small balls into the oil for frying. Turn it on the other side after 3-4 minutes. Both the sides should turn golden-brown.
Step 3: Take them out using a slotted spoon. Drain the excess oil on a paper napkin.
Step 4: Serve hot with sauce of your choice!
