Orange Chicken is light Chinese chicken recipe. It is more popular in America as it is not so spicy on the palate. Here, the chicken is cooked in orange juice giving it a tangy twist.

500g chicken, small cut
4 tsp soya sauce
1 tsp vinegar
2 tsp corn flour
1/2 tsp baking soda
1/4 tsp black pepper powder
1 tbsp red chilli sauce
1 tbsp garlic paste
1 tbsp sugar
200ml orange juice
1 tbsp orange zest
2 green onions, finely chopped
4-5 garlic cloves, minced
1 tbsp ginger, julienned
3 tbsp oil
1 tsp salt
Step 1: Marinate the chicken pieces with cornflour, black pepper powder, baking soda, vinegar and 2 tsp soya sauce. Set aside.
Step 2: In a mixing bowl, add red chilli sauce, garlic paste, sugar, 2 tsp soya sauce, orange zest and orange juice. Mix everything well. Set aside.
Step 3: Heat oil in a wok. Add the minced garlic and julienned ginger. Stir for a minute.
Step 4: Toss in the marinated chicken and cook for 20 minutes till it is 3/4th done. Also, the oil would start to separate.
Step 5: Now pour the mixture in Step 2 into the wok. Give it a good mix. Lower the heat, cover and cook for 10-15 minutes till the sauce reduces to make a slightly thick consistency and coats the chicken. Add salt and cook for 2 minutes. Check seasoning.
Step 6: Sprinkle the green onions. Serve hot with rice!
