Fattoush is a famous Levantine salad dish which is also very easy to make. It is wholesome and nutritious meal that scores high with the weight-watchers too! An exotic quick fix to your boring salad routine, Fattoush is like a breath of fresh air, quite literally a garden on your plate!
The key differentiating factor is the dressing that adds those distinctive, tangy flavours to the veggies. Also, the pita bread is the star of this recipe which brings along the much-needed crunch. It is essentially, a genius recipe to utilise leftover pita bread (‘Fatta’ of Fattoush). So wait no more, try it and spread the love!

Serves 6
3 pita bread
2 tomatoes, finely chopped
1 green capsicum, finely chopped
1 red capsicum, finely chopped
1 yellow capsicum, finely chopped
1 onion, finely chopped
1 cucumber, diced
1 head of Iceberg lettuce, broken to bite-size pieces
2 tbsp mint leaves
4 tbsp olive oil
2 tsp salt
2 tsp black pepper powder
2 tsp mixed herbs
3 garlic cloves, minced
3 tbsp lemon juice
2 tbsp lemon zest (alternative to sumac)

Step 1: Mix together 3 tbsp olive oil, salt, black pepper powder, mixed herbs, garlic, lemon juice, lemon zest in a large bowl.
Step 2: Add the tomatoes, cucumber, onion, Iceberg lettuce, mint leaves, green, red and yellow capsicum in that bowl. Toss the veggies so that they mix well with dressing. Set aside.
Step 3: While serving, heat 1 tbsp olive oil in a non-stick skillet. Toast the pita bread on both sides. Cut them into bite-size pieces.
Step 4: Serve the veggies with the toasted pita topping. Add the pita bread at the very end, just before serving to maintain the crunch. Enjoy!
