Patatas Bravas with Salsa Bravas and Aioli

Patatas Bravas with Salsa Bravas and Aioli is a yummy Spanish appetiser! Commonly served as a part of Tapas, this is super easy to make and is filled with flavours! It definitely makes for a great party appetiser!
Patatas Bravas uses potatoes that are boiled, air-dried and deep-fried and mixed with hot spices, resulting in crunchy, flavourful bites! (‘Patatas Bravas’ translates to ‘Spicy Potatoes’ in English).
Salsa Bravas is a spicy form of Salsa that uses the basic core ingredient tomatoes with spicy flavours, making it wild indeed!
Aioli needs a special mention. I discovered this dish while researching about Patatas Bravas. Needless to say, it is the easiest dip I have come across yet. A classic Aioli uses garlic and olive oil with some seasoning and is typically made with a mortar and pestle.
Here, I have recreated the original recipe of Patatas Bravas with Salsa Bravas and Aioli. Hope you guys enjoy making it as much as I did!

Patatas Bravas
Serves 4
8 large potatoes, cubed
2 tsp salt
1 tsp paprika
1 tsp black pepper powder
1 tsp Cayenne pepper powder
Oil for deep frying
Water for boiling

Step 1: Boil half a pan of water with 1 tsp salt. Toss in the cubed potatoes. Boil till they are just done. Do not over boil.
Step 2: Drain the potatoes and air dry completely. This would take about 40-45 minutes. Make sure the potatoes are completely dry.
Step 3: Mix 1 tsp salt, paprika, black pepper powder, and Cayenne pepper powder in a bowl and set aside.
Step 4: Heat oil for frying the potatoes in a wok/karahi. On high heat, deep fry the boiled potatoes in batches. Fry till the potatoes turn golden-brown. Drain the excess oil on an absorbent paper.
Step 5: Mix the fried potatoes with the spice mixture in Step 3. Check and adjust the seasoning and spices. Serve hot!

Salsa Bravas
Makes 1 bowl
1 large onion, finely chopped
4 large tomatoes, finely chopped
8 cloves of garlic, minced
1 tsp salt
1 tsp black pepper powder
1 tsp red chilli powder
1 tsp paprika
1 tsp Cayenne pepper powder
1 tbsp vinegar
1 tsp sugar
1/4 cup water
1 tbsp olive oil

Step 1: Heat olive oil in a skillet. Saute the garlic and onion till they change colour.
Step 2: Lower the heat. Add red chilli powder, paprika, and Cayenne pepper powder. Mix.
Step 3: Add the tomatoes, salt, sugar, and vinegar. Give it a mix. Add water, cover and cook for 10-15 minutes till they it turns soft and mushy. Check and adjust seasoning and spices.
Step 4: Remove from heat and allow it to cool. Blend it in a mixer to a fine puree. Serve hot!

Makes 1 bowl
2o cloves of garlic
1/4 cup olive oil
1/2 tsp salt
Juice of 1 lemon

Step 1: In a mortar, grind the garlic cloves in batches of 5. Add part of the olive oil with each batch. Grind slowly to make a smooth consistency.
Step 2: Add salt and lemon. Check and adjust the taste. Serve at room temperature!
