2 apples, medium sliced lengthwise
1/4 cup white flour
2 tbsp cornflour
1/4 tsp baking powder
1/2 cup sugar
1 tbsp oil
1/4 cup water
1 tbsp sesame seeds, lightly roasted
Oil for deep frying
Step 1: To prepare the toffee coating, put the sugar, oil and water in a pan and stir on high flame.
Step 2: Reduce the heat when the mixture begins to boil. Keep stirring continuously. Stir for 5 minutes after the first boil, until it is light golden in colour. Put a drop between the thumb and forefinger. It should form a single thread between the fingers when pulled apart. At this point, remove from fire.
Step 3: Add the roasted sesame seeds to the syrup and set aside.
Step 4: Mix the white flour, cornflour, baking powder in a bowl. Add about 1/4 cup water to get a smooth, thick batter of coating consistency. It should not be runny in texture.
Step 5: Heat oil for deep frying in a wok. Dip the sliced apples in the batter and coat them on all sides. Deep fry 4-5 pieces together.
Step 6: Remove from oil as they turn golden brown. Put them on paper towels to absorb the excess oil.
Step 7: Dip the apples in the toffee syrup made above and set aside on a plate. Sprinkle some more sesame seeds and serve as is or with some ice cream of your choice!
