Tandoori Mutton Chops is a tasty and succulent appetizer comprising of only the chops portion of the goat meat. Steeped in aromatic flavours, this delicious Mughlai cuisine starter, is traditionally roasted in a tandoor. However, here I am recreating it over my humble pan and consequently the microwave oven.

6 mutton chops, washed
2 tbsp yogurt
1 tomato, pureed
2 tsp coriander powder
1 tsp ginger, crushed
1 tsp garlic, crushed
1 tsp red chilli powder
1/2 tsp turmeric powder
1 pinch of red food colour
1 tsp salt
2 tbsp oil
Juice of 1/2 lemon
Iceberg lettuce, sliced cabbage, chopped coriander, onion rings, lemon wedges for garnishing
Step 1: Wash the mutton chops and set aside.
Step 2: In a bowl, add the yogurt, tomato puree, coriander powder, ginger, garlic, red chilli powder, turmeric powder, red food colour, salt, 1 tbsp oil and lemon juice. Whisk them together.
Step 3: Add the mutton chops to the mixture and marinate for at least 4 hours.
Step 4: Heat 1 tbsp oil in a pan and add the marinated mutton chops. Stir-fry on medium flame till the water is absorbed and the oil separates.
Step 5: Transfer the partially cooked mutton chops to a microwave tray. Cook on Micro 80 for 6 minutes. Then, turn the mutton chops to the other side and cook on Micro 80 for another 6 minutes.
Step 6: Serve hot on a bed of Iceberg lettuce leaves, cabbage, garnished with chopped coriander, onion rings and lemon wedges!
