Pita Sandwich with Hummus is a classic Lebanese fare. It is extremely popular in the Indian restaurants as well. This recipe is mild on spices but full of flavour and extremely healthy.
The key to get a smooth and original recipe of Hummus is the order of ingredients added for blending. Follow the steps below for authentic Hummus which can stored as well for other future usage.

Pita Sandwich
Serves 2
2 pita bread slices
2 tbsp diced green capsicum
2 tbsp diced tomato
2 tbsp boiled sweet corn
2 tbsp diced carrot
2 leaves of Iceberg lettuce
1 tsp lemon juice
1/4 tsp salt
1/4 tsp black pepper powder
2 tbsp hummus

Step 1: Toast the pita bread on both sides on a non-stick tawa. Slit them open partially.
Step 2: Apply a layer of hummus on the insides of the bread.
Step 3: Insert the Iceberg lettuce leaves in the bread.
Step 4: Mix together the diced green capsicum, tomato, carrot and boiled sweet corn in a bowl with lemon juice, salt, and black pepper powder.
Step 5: Add this mixture in the bread and serve at room temperature with hummus!

Makes 1 bowl
250g chickpeas, soaked in water overnight
2 garlic cloves, finely diced
6 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper powder
1/2 tsp roasted cumin powder
2 tbsp lemon juice
4 tbsp sesame seeds
Paprika and Italian mixed herbs for garnish

Step 1: Toast the sesame seeds lightly in a pan. Allow them to cool.
Step 2: Blend the sesame seeds with 2 tbsp olive oil to get a smooth paste. This is tahini.
Step 3: To this tahini, add the lemon juice and give it a blend.
Step 4: Next, add the remaining 4 tbsp olive oil, garlic, salt, black pepper powder, and roasted cumin powder. Give it all a blend.
Step 5: Add water if required, to get a smooth paste.
Step 6: Check and adjust seasoning. Pour in a plate, garnish with paprika, Italian mixed herbs, and olive oil. Serve with Pita Sandwich!
