Chicken Shawarma

Chicken Shawarma is a popular Arabic cuisine appetizer. Traditionally, Shawarma is a chicken or mutton preparation, wherein the meat is roasted by ‘turning’, that is rotisserie-style cooking. Here, I am making in my non-stick grill pan, to get that roasted and juicy texture.
Chicken Shawarma can be taken in various forms, as a wrap, roll, topping or just in itself. Here, I am creating it as a wrap which is a healthier version with lots of veggies.
It is best served with a yogurt sauce, tangy veggies and mayonnaise for that heavenly experience. Check it for yourself!

Serves 2
1 cup wheat flour
2 cups white flour
1 small onion, finely chopped
1 tomato, finely sliced
1 green capsicum, finely sliced
1 tbsp sesame seeds, dry roasted
3 garlic flakes
2 tbsp olive oil
2 tsp salt
1/2 cup yogurt, whipped
Few drops of lemon juice
A pinch of oregano flakes
4 pieces boneless chicken, washed
1 tsp black pepper powder
1 tsp red chilli powder
4 tbsp mayonnaise

Step 1: To the chicken pieces, add 1/2 tsp salt, black pepper powder, red chilli powder and set aside.
Step 2: Mix together the white flour and wheat flour. Make a firm dough using water. Set aside.
Step 3: Grind together the roasted sesame seeds, 2 garlic flakes, 1 tsp olive oil and 1/2 tsp salt to a paste. This is also called Tahini, used in various Lebanese recipes. Set aside.
Step 4: Whisk together the whipped yogurt, 1 tsp salt, few drops of juice. Add a crushed garlic. Mix well. Top it with oregano flakes. This is yogurt sauce. Set aside.
Step 5: Heat 1 tbsp olive oil in a grill pan. On high flame, add the boneless chicken pieces in the oil. Let it roast in all sides. Lower the heat, cover and cook for 10 minutes.
Step 6: Increase the heat and check if the chicken is cooked. Add 1 tbsp of mayonnaise. Mix well. Cook for another 5 minutes till the flavours seep in. Remove from heat and separate the chicken fibres. Set aside. Your Chicken Shawarma is ready.
Step 7: Now, roll out circular shapes from the dough of Step 2. Cook the bread on a flat pan/tawa. Apply olive oil and remove from heat.
Step 8: On the bread, apply a layer of mayonnaise. Add onions, tomatoes, capsicum and Chicken Shawarma on the centre line. Spread some Tahini. Wrap it all together and pin it with a toothpick if needed.
Step 9: Serve the Chicken Shawarma Wrap with Yogurt sauce and mayonnaise!
