Pasta al Limone is a classic south Italian recipe, often known for its summery and lemony characteristics. 300g Spaghetti pasta
¼ cup cream
6 cubes butter
½ cup grated Parmesan cheese
Water for boiling
2 tbsp salt
2 tbsp lemon juice
Lemon zest of 1 large lemon
1 tsp lemon julienne for garnish
1 tsp black pepper powder
Step 1: In a pan, add water and salt for boiling. Add the pasta and boil till it is just cooked.
Step 2: In a skillet, add the lemon zest and cream. Switch on the flame on low and allow the mixture to simmer. At this point, add the cold butter cubes one by one and incorporate well.
Step 3: Add the cooked pasta from the pan and mix well. Also, add the cheese little by little and mix well. Make sure there is no clumping of cheese.
Step 4: Scoop out 1 cup of pasta water and pour into the skillet so that the pasta loosens and incorporates the other ingredients.
Step 5: Now, add the lemon juice and adjust the seasoning and tartness.
Step 6: Garnish with the black pepper powder and lemon julienne. Serve hot!
