Recipe Name: Chocolate Cookie Icebox Cake

Ingredients:

Two cups of all-purpose flour

One teaspoon of salt 

Half a teaspoon of baking soda 

One cup of butter (keep at room temperature and unsalted) 

One cup of packed light brown sugar 

One cup of sugar (granulated)

One tablespoon and two teaspoons of vanilla extract 

Two large eggs (keep at room temperature)

Two and half a cups of semisweet mini chocolate chips

Three cups of heavy cream 

Half a cup of confectioners’ sugar

Directions:

In the first step, you need to preheat the oven to 350 degrees F. Now, take two baking sheets and line them with bakery paper.

On the other side, take a medium-sized bowl. In this bowl, add flour, salt, and baking soda. Whisk all the items together and set them aside.

Now, take a stand mixer with a paddle attachment. In the bowl, add butter, brown sugar, and granulated sugar. Mix all the items on a medium speed. Keep mixing until it becomes light and fluffy. It will take approximately three to five minutes. After that, add two teaspoons of vanilla extract and eggs to the bowl. Blend them all until they become smooth. Now, slow up the speed of the mixer and add flour. After that, add two cups of chocolate chips until they become fully incorporated.

Now, place the prepared dough on the tray. Make small balls and place them onto the baking sheets. Make sure to keep all the balls two inches apart from the others. 

Now, bake the cookies for twelve to fifteen minutes or until they become crisp and golden. Now, let the cookies cool on a cooling rack.

On the other side, whip heavy cream with confectioners’ sugar. Now, add the remaining vanilla extract into the cream mixture. Now, take the cake plate and layer the prepared heavy cream. Now, place some cookies over the cream layer. After that, add another layer of heavy cream over the cookies. Cover the layer with some more cookies. 

You need to repeat the process for three to four layers. In the end, sprinkle some chocolate chips on the top of the cake. You can also use other things for garnishing. In the end, refrigerate the cake for at least four hours. You can also keep the cake in the refrigerator overnight.
